

Diced chicken salad
Ingredients:
Product code 22005 Frozen cooked chicken pieces.
- 300 g cooked chicken, cut into cubes (place on the grill to obtain grill marks)
- 4 cups romaine lettuce or spring mix
- 1/2 cucumber, diced
- 1 red bell pepper, finely chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup feta or cheddar cheese, cubed (optional)
- 1/4 cup nuts or seeds (almonds, pecans, sunflower seeds)
- Croutons (optional)
- You can add fruit (mango, apple), avocado, or replace the cheese with Greek yogurt.
Easy dressing:
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar or lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Preparation:
- Thaw the chicken (grill it), then cut it into cubes.
- Assemble the salad:
- In a large bowl, combine the lettuce, cucumber, bell pepper, tomatoes, and cheese.
- Add the chicken:
- Place the chicken cubes on top of the salad.
- Add the walnuts and croutons (optional).
- Prepare the dressing:
- Mix the oil, vinegar, mustard, salt, and pepper in a small bowl or jar with a lid.
- Serve:
- Pour the dressing over the salad just before serving.
